Thanksgiving Leftovers Casserole Recipe

My favorite part of Thanksgiving is spending time with my family plus all the food. My family makes awesome food and everyone makes a lot of it. We always have tons of leftovers. My aunt even stocks up on plastic containers so we can all bring home the leftovers. My husband isn’t a big fan of turkey so I wanted to make our turkey leftovers into something that he would enjoy. I decided to make a Thanksgiving Leftovers Casserole.

It is simple to make. Basically, it is just layering the leftovers into a baking dish. I recently received a Good Cook Nonstick 9 in. Pie Pan so I wanted to use that instead of the usual casserole dish. The pan is nonstick but I always spray every dish regardless. I wanted to use up our turkey, mashed potatoes, stuffing and gravy leftovers. I used the stuffing as the bottom layer and added the turkey on top. I spread some of the gravy on top of the turkey since turkey can be dry. I didn’t have any green bean casserole leftover so I used a can of green beans as the next layer with a can of cream of chicken soup spread on top. I wanted to add more flavor to the mashed potatoes so I added some milk, garlic and cheese to them. Then I added the revamped mashed potatoes to my pie pan as the top layer.

I baked the casserole on 350F for 30 minutes. I added cheese and fried onions as a topping then put it back in for 5 minutes for the cheese to melt. Then it was ready to eat.

My husband really enjoyed the casserole and didn’t mind eating the turkey then. The Thanksgiving Leftovers Casserole uses up leftovers and brings the great flavors out again.

Ingredients
  • 1½ cup prepared stuffing
  • 2 cups chopped turkey
  • ½ cup gravy
  • 1 (14.5 oz) can green beans
  • 1 (10¾ oz.) can cream of chicken soup
  • 1½ cup mashed potatoes
  • ¼ cup milk
  • 1½ cup shredded cheddar cheese, divided
  • ½ tsp. minced garlic
  • ¼ cup fried onions
Instructions
  1. Preheat oven to 350 F
  2. Spray a 9 inch deep dish pie pan or casserole dish with nonstick spray.
  3. Spread stuffing onto the bottom of the pan.
  4. Add turkey and spread gravy on top.
  5. Add green beans and spread cream of chicken soup on top.
  6. In a bowl, mix mashed potatoes, milk, 1 cup cheddar cheese and garlic together.
  7. Add mashed potato mixture into the pan.
  8. Bake for 30 minutes.
  9. Remove from oven. Top with ½ cup cheddar cheese and fried onions
  10. Bake for another 5 minutes until cheese is melted.
