Ingredients
  • 1 cup flour
  • ⅓ cup cocoa powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1 tsp. vanilla extract
  • 1 cup chocolate chips
  • 20 snack-size peppermint patties
Instructions
  1. Preheat oven to 350 F.
  2. In a bowl, combine the flour, cocoa powder, baking soda and salt. Set aside.
  3. In a large bowl, cream together the butter, brown sugar and white sugar. Beat in the egg and vanilla extract. Mix in the flour mixture and chocolate chips. Cover and refrigerate for 1 hour.
  4. Using a cookie scoop, place a scoop of cookie dough in your hand and place a peppermint patty on top. Place another scoop of cookie dough on top and form together. Place stuffed cookies onto cookie sheets.
  5. Bake for 14 minutes, or until done.
