Green smoothies are a delicious, healthy drink. I frequently have bananas that are on the verge of being too ripe. Usually I freeze them to use in smoothies but I wanted to make something different. I decided to make Green Smoothie Muffins. The muffins contain the same basic green smoothie ingredients: spinach, banana and Greek yogurt. Green Smoothie Muffins are a great way to add some fruit and vegetables to your morning breakfast or snack.

Ingredients
- 1½ cups flour
- ½ cup white sugar
- ¼ cup brown sugar
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. cinnamon
- ½ tsp. nutmeg
- ½ tsp. salt
- 2 cups spinach
- 3 bananas, mashed
- 3 Tbs. vegetable oil
- 2 Tbs. Greek yogurt
- 1 tsp. vanilla extract
- 1 egg, lightly beaten
Instructions
- Preheat oven to 350 F. Line muffin pans with liners.
- In a large bowl, combine flour, white sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg and salt.
- In a blender, puree spinach, bananas, oil, Greek yogurt and vanilla extract. Stir into the flour mixture with the egg just until blended. Spoon batter into muffin cups.
- Bake for 18 minutes or until inserted toothpick comes out clean.
