Green Smoothie Muffins Recipe

Green Smoothie Muffins are delicious for breakfast or as a snack. The muffins have the same main ingredients as a green smoothie: spinach, banana and Greek yogurt.

Green smoothies are a delicious, healthy drink. I frequently have bananas that are on the verge of being too ripe. Usually I freeze them to use in smoothies but I wanted to make something different. I decided to make Green Smoothie Muffins. The muffins contain the same basic green smoothie ingredients: spinach, banana and Greek yogurt. Green Smoothie Muffins are a great way to add some fruit and vegetables to your morning breakfast or snack.

Ingredients
  • 1½ cups flour
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. salt
  • 2 cups spinach
  • 3 bananas, mashed
  • 3 Tbs. vegetable oil
  • 2 Tbs. Greek yogurt
  • 1 tsp. vanilla extract
  • 1 egg, lightly beaten
Instructions
  1. Preheat oven to 350 F. Line muffin pans with liners.
  2. In a large bowl, combine flour, white sugar, brown sugar, baking soda, baking powder, cinnamon, nutmeg and salt.
  3. In a blender, puree spinach, bananas, oil, Greek yogurt and vanilla extract. Stir into the flour mixture with the egg just until blended. Spoon batter into muffin cups.
  4. Bake for 18 minutes or until inserted toothpick comes out clean.
