My family loves blueberries. Besides just eating handfuls of blueberries, we also enjoy eating them in pancakes, waffles, muffins and many other things. One of our favorite ways to enjoy blueberries is in Blueberry Streusel Muffins. Each muffin is filled with blueberries and covered in a streusel topping. Ingredients
Strawberry Muffins
  • 1½ cups flour
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 2 tsp. baking powder
  • ½ tsp. cinnamon
  • ½ tsp. salt
  • ½ cup milk
  • ⅓ cup vegetable oil
  • ½ tsp. vanilla extract
  • 1 egg
  • 1½ cup blueberries
Streusel Topping
  • ¼ cup brown sugar
  • 2 Tbs. flour
  • ½ tsp. cinnamon
  • 2 Tbs. butter
Instructions
Strawberry Muffins
  1. Preheat oven to 375 F. Line muffin pan with paper liners.
  2. In a large bowl, combine flour, white sugar, brown sugar, baking powder, cinnamon and salt. Mix in blueberries.
  3. In a measuring cup, add in milk, vegetable oil, vanilla extract and egg. Pour into flour mixture. Mix until just combined.
  4. Fill each muffin cup ¾ full.
Streusel Topping
  1. In a bowl, mix together brown sugar, flour, and cinnamon. Cut in the butter. Sprinkle topping over the muffins.
  2. Bake for 22 minutes, or until done.
