Rainbow Fruit and Yogurt Parfait is a healthy and delicious treat. They are great for breakfast or as a healthy snack.
Our fridge is always stocked with yogurt. My husband likes to pack it in his lunchbox for work or he eats it at home for a snack. Our toddler also enjoys snacking on yogurt throughout the day. I like to use yogurt in my smoothies or sometimes I even use it in baking recipes. I recently bought a large container of vanilla Greek yogurt that was on sale that I needed to use. I also had lots of fruit that was ripe in the house. I decided to use some of the yogurt and fruit to make Rainbow Fruit Parfaits.
Fruit and yogurt parfaits are a delicious healthy snack. They are so simple and quick to make. You just need to layer yogurt, fruit and granola anyway you want into a container. For my Rainbow Fruit Parfait, I used strawberries, clementines, mangoes, kiwis and blueberries to make the colors of a rainbow.

- Greek vanilla yogurt (For a vegan version, use non-dairy yogurt)
- Granola
- In a glass, layer yogurt, fruit and granola.

How long in advance can this be made ahead? Thinking graduation party in taster size. Your thoughts?

A day ahead of time would be fine. If you do a couple days ahead, the fruit might start to sweat but you would only be able to tell if it was in a clear glass.
