Banana Muffins spiced with cinnamon and nutmeg are perfect for breakfast or as a snack.
We always have a bunch of bananas in our house, but often they become overripe. Most of the time I use them to make banana bread or muffins. I usually like try creative varieties but sometimes I just want to enjoy a simple traditional version. Banana Muffins are a delicious classic muffin spiced with cinnamon and nutmeg.

Ingredients
- 1½ cups flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- ½ tsp. salt
- ¾ tsp. cinnamon
- ½ tsp. nutmeg
- 1 egg, lightly beaten
- 3 bananas, mashed
- ½ cup white sugar
- ¼ cup brown sugar
- ⅓ cup oil
- 1 tsp. vanilla extract
- Cinnamon sugar
Instructions
- Preheat oven to 375 F. Line muffin tins with liners.
- In a large bowl, combine flour, baking soda, baking powder, salt, cinnamon and nutmeg.
- In a medium bowl, beat together the egg, bananas, white sugar, brown sugar, oil and vanilla extract. Stir into the flour mixture just until blended. Spoon batter into muffin cups. Sprinkle cinnamon sugar on top.
- Bake for 18 minutes or until inserted toothpick comes out clean.
