Chicken and Dumplings

Ingredients
Chicken Stew
  • 1½ lb. boneless chicken breasts, cubed
  • Poultry seasoning
  • 1 Tbs. olive oil
  • ½ cup chopped onion
  • 2 (14.5 oz) cans of chicken broth
  • 2 (10.75 oz) cans of cream of chicken soup
  • 1 cup milk
  • 16 oz. frozen peas & carrots
  • 1 tsp. minced garlic
Dumplings
  • 2 cups flour
  • 4 tsp. baking powder
  • ½ tsp. salt
  • 1 tsp. parsley flakes
  • 1 cup milk
  • ¼ cup vegetable oil
Instructions
Chicken Stew
  1. Sprinkle chicken breast pieces with poultry seasoning.
  2. In a large pot, heat olive oil over medium-high heat. Add chicken and onions. Cook mixture until chicken is cooked through.
  3. Stir in chicken broth, cream of chicken soup, milk, peas & carrots, and garlic. Bring the mixture to a simmer. Then reduce the heat to low and allow to cook for 40 minutes.
Dumplings
  1. In a bowl, stir together flour, baking powder, salt and parsley. Add the milk and vegetable oil. Stir mixture just until moistened.
  2. Drop tablespoons of the dumpling mixture into the chicken stew. Cover the pot and bring to a boil. Then simmer for an additional 15 minutes.
  3. Enjoy!
