Sweet Potato Casserole

Ingredients
  • 6 medium to large sweet potatoes
  • 2 Tbs. butter
  • ¼ cup brown sugar
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • ½ tsp. salt
  • 1 tsp. vanilla extract
  • 2 eggs
  • ½ cup milk
Topping
  • ½ cup brown sugar
  • ⅓ cup flour
  • 2 Tbs. butter
  • ½ cup chopped pecans
Instructions
  1. Preheat oven to 400 F. Line a cookie sheet with foil.
  2. Scrub sweet potatoes and prick with a fork.
  3. Bake in oven for one hour or until softened.
  4. Remove from oven and lower the temperature to 350 F.
  5. Allow the sweet potatoes to cool for 5 minutes then use a spoon to scoop out the insides.
  6. In a large bowl, mix together the sweet potatoes, butter, brown sugar, cinnamon, nutmeg, salt, vanilla extract, eggs and milk.
  7. Spoon into a 9x13 inch baking dish.
Topping
  1. In a medium bowl, mix together the brown sugar and flour. Cut in the butter and then stir in the pecans. Sprinkle the topping mixture over the sweet potato mixture.
  2. Bake for 30 minutes or until the topping is lightly brown.
