Mint Brownies

  • 1 cup butter
  • 1 cup flour
  • ⅔ cup unsweetened cocoa powder
  • ½ tsp. baking powder
  • ½ tsp. salt
  • 1 cup semisweet chocolate chips
  • 1½ cups white sugar
  • 4 eggs
  • 2 tsp. vanilla extract
Mint Frosting
  • ½ cup butter, softened
  • 2 cups confectioners' sugar
  • 1 Tbs. milk
  • ½ tsp. peppermint extract
  • Green food coloring
Chocolate Topping
  • 1 cup semisweet chocolate chips
  • ½ cup butter
  1. Preheat oven to 350 F. Grease a 9x13 inch pan.
  2. In a large saucepan, melt butter. Remove from heat.
  3. In a bowl, combine flour, cocoa powder, baking powder and salt. Add in chocolate chips. Set aside.
  4. In the melted butter saucepan, mix in sugar, eggs and vanilla extract. Whisk in flour mixture until blended. Spread batter into prepared pan.
  5. Bake for 25 minutes or until done.
  6. Cool completely.
Mint Frosting
  1. In a bowl, cream the butter. Then beat in confectioners' sugar, milk, peppermint extract and green food coloring until smooth & fluffy.
  2. Spread over cooled brownies.
Chocolate Topping
  1. In a microwaveable bowl, melt the chocolate chips and butter for 1 minute or until melted, stirring occasionally.
  2. Let cool for 5 minutes. Spread over the top of the mint frosting.
  3. Allow to chocolate topping to set. Or speed up the setting process by covering and refrigerating for an hour or until set.
