A Rainbow Fruit Tray and Fruit Dip is a perfect food to celebrate St. Patrick’s Day, Spring, or to bring to a picnic. It’s a healthy kid-friendly snack.
I always have a bunch of fruit at all times in our house. My family likes to snack on fruit throughout the day. I also like to cut it up and freeze it for smoothies. I recently found some amazing deals on fruit and of course, I stocked up. Since I bought so much fruit, I wanted to incorporate it into different types of recipes. I decided to make a Rainbow Fruit Tray and Fruit Dip to celebrate St. Patrick’s Day and Spring.
The Rainbow Fruit Tray features all of the colors of the rainbow. To form my rainbow, I used strawberries, clementines, pineapple, kiwis, blueberries and grapes. I used banana slices at the one end to represent a cloud or gold coins for St. Patrick’s Day. Then at the other end of the rainbow, I spooned the fruit dip to look like a cloud. The Rainbow Fruit Tray and Fruit Dip came out adorable and my family devoured it!
- Strawberries
- Clementines
- Pineapple
- Kiwis
- Blueberries
- Grapes
- Bananas
- 8 oz. cream cheese, softened
- 7 oz. marshmallow creme
- Wash and cut fruit if necessary. Arrange fruit into a rainbow shape. Place the sliced bananas at the one end of the rainbow.
- Mix together cream cheese and marshmallow creme.
- Spoon fruit dip at the other end of the rainbow.
