Ingredients
  • 1½ cup flour
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • ½ cup butter, softened
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • 1½ tsp. vanilla extract
  • 1 cup chocolate chips
  • 24 mini or snack size peanut butter cups
Instructions
  1. Preheat oven to 350 F.
  2. In a bowl, combine the flour, baking soda and salt. Set aside.
  3. In a large bowl, cream together the butter, brown sugar and white sugar. Beat in the egg and vanilla extract. Mix in the flour mixture and chocolate chips. Cover and refrigerate for 1 hour.
  4. Using a cookie scoop, place a scoop of cookie dough in your hand and place a mini peanut butter cup on top. Place another scoop of cookie dough on top and form together. Place stuffed cookies onto cookie sheets.
  5. Bake for 14 minutes, or until done.
