St. Patrick’s Day is almost here! Of course, you need to enjoy a St. Patrick’s Day dessert in celebration. The dessert has to be mint and green. I decided to make Mint Brownies, which are a refreshing mint chocolate dessert. The dessert is made up of three layers: chocolate brownies, mint frosting and chocolate topping. Mint Brownies are the perfect dessert for mint chocolate lovers.

Ingredients
Brownies
- 1 cup butter
- 1 cup flour
- ⅔ cup unsweetened cocoa powder
- ½ tsp. baking powder
- ½ tsp. salt
- 1 cup semisweet chocolate chips
- 1½ cups white sugar
- 4 eggs
- 2 tsp. vanilla extract
Mint Frosting
- ½ cup butter, softened
- 2 cups confectioners' sugar
- 1 Tbs. milk
- ½ tsp. peppermint extract
- Green food coloring
Chocolate Topping
- 1 cup semisweet chocolate chips
- ½ cup butter
Instructions
Brownies
- Preheat oven to 350 F. Grease a 9x13 inch pan.
- In a large saucepan, melt butter. Remove from heat.
- In a bowl, combine flour, cocoa powder, baking powder and salt. Add in chocolate chips. Set aside.
- In the melted butter saucepan, mix in sugar, eggs and vanilla extract. Whisk in flour mixture until blended. Spread batter into prepared pan.
- Bake for 25 minutes or until done.
- Cool completely.
Mint Frosting
- In a bowl, cream the butter. Then beat in confectioners' sugar, milk, peppermint extract and green food coloring until smooth & fluffy.
- Spread over cooled brownies.
Chocolate Topping
- In a microwaveable bowl, melt the chocolate chips and butter for 1 minute or until melted, stirring occasionally.
- Let cool for 5 minutes. Spread over the top of the mint frosting.
- Allow to chocolate topping to set. Or speed up the setting process by covering and refrigerating for an hour or until set.
