Strawberry Streusel Muffins Recipe

Strawberry Streusel Muffins are filled with fresh strawberries and covered with a streusel topping.

Muffins never last long in my house. I am always making different varieties. When I have a bunch of strawberries on hand, I like to make Strawberry Streusel Muffins. Each muffin is filled with strawberries and covered in streusel topping. Strawberry Streusel Muffins are delicious for breakfast or as a snack.

Ingredients
Strawberry Muffins
  • 1½ cups flour
  • ½ cup white sugar
  • ¼ cup brown sugar
  • 2 tsp. baking powder
  • ½ tsp. cinnamon
  • ½ tsp. salt
  • ½ cup milk
  • ⅓ cup vegetable oil
  • ½ tsp. vanilla extract
  • 1 egg
  • 1¼ cup chopped strawberries
Streusel Topping
  • ¼ cup brown sugar
  • 2 Tbs. flour
  • ½ tsp. cinnamon
  • 2 Tbs. butter
Instructions
Strawberry Muffins
  1. Preheat oven to 375 F. Line muffin pan with paper liners.
  2. In a large bowl, combine flour, white sugar, brown sugar, baking powder, cinnamon and salt.
  3. In a measuring cup, add in milk, vegetable oil, vanilla extract and egg. Pour into flour mixture. Add in strawberries and mix until just combined.
  4. Fill each muffin cup ¾ full.
Streusel Topping
  1. In a bowl, mix together brown sugar, flour, and cinnamon. Cut in the butter. Sprinkle topping over the muffins.
  2. Bake for 22 minutes, or until done.
