My family likes potato chips, but I hardly ever buy them. Chips are definitely not a healthy snack since they are fried. It is also expensive to buy a bag of chips that only contains a small amount of chips inside. I decided to make my own potato chips at home for a cheaper and healthier version. Making Baked Potato Chips are very easy to make especially if you have a mandolin slicer. You just need to clean the potatoes and slice them into 1/8 inch slices. Then toss the potato slices in olive oil and season with salt. Place the potato slices on a tray and bake in the oven until crispy. It’s that easy and they taste delicious. Your family will love these Baked Potato Chips as a snack or to eat with their sandwich at lunch.
- 2 russet potatoes
- 2 Tbs. olive oil
- Salt
- Preheat oven to 400 F. Line baking sheets with parchment paper.
- Clean each potato and slice into ⅛ inch slices.
- In a bowl, toss the potato slices with olive oil and season with salt. Arrange potato slices on the baking sheets.
- Bake for 18 minutes or until done.

I remember deep-frying potatoes to make chips when I was a kid, but I’ve definitely grown up and these baked potato chips look so much more appetizing.

I’m not sure why, but my potatoes have required over 45 minutes to get crispy and I’ve had to turn up the heat as well and I am still baking them. 18 minutes was not even close to enough time. I followed the directions, but will be prepared next time to give myself a lot more time to bake them.

It sounds like they were sliced too thick. They should only be an 1/8 inch thick. I definitely recommend a mandolin slicer for getting evenly cut, measured slices.

I made these chips, following all the directions, but after the 18 minutes half of the chips were fully brown and tasted burnt, and the other half still had uncooked patches. The only things I did differently were that I used a Silpat instead of paper (which shouldn’t make a difference) and I only did one sheet of chips instead of two. What did I do wrong?

It sounds like the potatoes weren’t the same thickness. If you use a mandolin slicer, all your slices will be even and they will all be the same thickness.
The nonstick silicone mat probably would make a slight difference on cooking time and browning, but I wouldn’t think it would significant.

I had the same problem and used a mandoline to make the slices. I tried a couple of batches; the first time I followed the recipe and the other I went rogue. I had the same blotchy results every time 🙁

You need to soak in cold water for 30 min. To take out starch then dry on paper towels

Mine burnt on one side and the other was uncooked. I used a slicer and I think they were too thin. Better luck next time.
