Pumpkin Spice Oatmeal Cookie Sandwiches are filled with pumpkin spice buttercream icing. They make the perfect dessert treat for Fall and Halloween.
Halloween is one of my favorite times of the year. Besides all the yummy pumpkin spice treats, like my Pumpkin Spice Oatmeal Cookie Sandwiches, I enjoy Fall activities. My family likes going to a corn maze, pumpkin patch, train ride and carving jack-o-lanterns. Of course, our favorite activity is getting my child dressed up in her costume and going trick-or-treating.
Since trick-or-treating is later in the evening, we usually start getting a little hungry by the end of it. I thought a snack table would be a great idea to enjoy afterwards. I decided to go shopping at Walmart to pick up food that would be quick to make.
I picked up HOT POCKETS® Pepperoni Pizza Snack Bites and STOUFFER’S® Classic Mac Cups 2pks to satisfy our hungry after trick-or-treating. The HOT POCKETS® Pepperoni Pizza Snack Bites are a great snack that can be microwaved in a little over a minute. The STOUFFER’S® Classic Mac Cups can be ready in a few minutes to satisfy our cravings. Each little cup contains 8-10g of protein and less than 250 calories. I also bought BUTTERFINGER® Fun Size 11.5 oz and NESTLÉ Jumbo Assorted Fun Size Candy 58oz as a treat. I’m planning on using the Baby Ruths, Crunch bars and Butterfingers in a few recipes too.
Our snack table has to be decorated for Halloween. I have a fun Halloween-themed table cloth and tableware. I put the HOT POCKETS® Pepperoni Pizza Snack Bites in a purple spider web tray. The STOUFFER’S® Cups are already in perfectly portioned little cups so they just get set on the table. I have an orange pumpkin decorated bowl for the NESTLÉ Jumbo Assorted Fun Size Candy 58oz and a skull bowl for the BUTTERFINGER® Fun Size 11.5 oz. For an extra treat, I have a black tray for my Pumpkin Spice Oatmeal Cookie Sandwiches.
When I saw NESTLÉ® TOLL HOUSE® Pumpkin Spice Morsels in the store, I had to try them. I knew I wanted to make cookies with the morsels but I wanted something a little different. So I decided to make Pumpkin Spice Oatmeal Cookie Sandwiches filled with pumpkin spice buttercream icing.
To make Pumpkin Spice Oatmeal Sandwiches, first you have to make the pumpkin spice oatmeal cookies. I use a cookie scoop to drop the cookies onto the sheet. It lets you scoop out the dough easily and the cookies will have a unified shape. I also use a non-stick silicone baking mat
on top of my cookie sheets. It replaces the need for parchment paper when baking. When the cookies are done baking, I remove them from the oven. I use my cookie spatula to flatten them slightly to make sure the cookies have flat tops for the cookie sandwiches. After the cookies are cooled completely, I make the pumpkin spice buttercream filling. I use about a tablespoon of filling between each cookie sandwich. It is the perfect amount to taste the delicious flavor of the filling without being overwhelming. My Pumpkin Spice Oatmeal Cookie Sandwiches are a perfect dessert treat for Fall and Halloween.
- ½ cup butter, softened
- ½ cup brown sugar
- ¼ cup white sugar
- 1 egg
- 1 tsp. vanilla extract
- 1½ cup quick oats
- 1 cup flour
- ½ tsp. baking soda
- ½ tsp. salt
- ¾ tsp. cinnamon
- ¼ tsp. nutmeg
- ¼ tsp. ginger
- ⅛ tsp. allspice
- ⅛ tsp. cloves
- ½ cup NESTLÉ® TOLL HOUSE® Pumpkin Spice Morsels
- ½ cup butter, softened
- 1 cup confectioners' sugar
- ½ tsp. vanilla extract
- ¾ tsp. cinnamon
- ¼ tsp. nutmeg
- ¼ tsp. ginger
- ⅛ tsp. allspice
- ⅛ tsp. cloves
- Preheat oven to 350 F.
- In a bowl, cream together butter, brown sugar and white sugar. Beat in egg and vanilla extract.
- In another bowl, combine oats, flour, baking soda, salt, cinnamon, nutmeg, ginger, allspice and cloves. Stir oat mixture into sugar mixture and mix in pumpkin spice morsels.
- Drop spoonfuls of cookie dough onto cookie sheets.
- Bake for 10 minutes, or until done.
- Remove from oven and slightly flatten cookies with a spatula. Allow cookies to cool on sheets for 5 minutes. Then transfer cookies onto a wire rack to cool completely.
- In a bowl, cream butter and then beat in confectioners' sugar, vanilla, cinnamon, nutmeg, ginger, allspice and cloves.
- Spoon a tablespoon of filling onto a cookie and top it with another cookie. Repeat with remaining cookies.

Oh yum yum….I wish we had Walmart in Oz. In face I don’t think I have even seen pumpkin spice morsels before. I could seriously tuck into these little cookies though 🙂
