Green Smoothie Pancakes Recipe

Green Smoothie Pancakes are a delicious breakfast that has the same main ingredients as a green smoothie: spinach, banana and Greek yogurt.

Green smoothies are a delicious, healthy drink. I usually like to freeze overripe bananas to use later to make smoothies. But I wanted to make something different with my overripe bananas. I decided to make Green Smoothie Pancakes. The pancakes contain the same basic green smoothie ingredients: spinach, banana and Greek yogurt. Green Smoothie Pancakes are a great way to add some fruit and vegetables to your morning breakfast.

Ingredients
  • 1 cup flour
  • 2 Tbs. white sugar
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • ½ cup spinach
  • 1 banana
  • 2 Tbs. Greek yogurt
  • ⅓ cup milk
  • ½ tsp. vanilla extract
  • 1 egg, beaten
Instructions
  1. In a bowl, combine flour, sugar, baking powder and salt.
  2. In a blender, puree spinach, banana, yogurt, milk and vanilla extract. Pour mixture and beaten egg into the flour mixture. Whisk until combined.
  3. Heat a skillet or griddle over medium heat. Coat with non-stick spray or melted butter.
  4. Pour ¼ cup of batter onto the skillet or griddle for each pancake. Cook until bubbles appear on top. Flip the pancakes and cook until golden brown.
