Green Smoothie Pancakes are a delicious breakfast that has the same main ingredients as a green smoothie: spinach, banana and Greek yogurt.
Green smoothies are a delicious, healthy drink. I usually like to freeze overripe bananas to use later to make smoothies. But I wanted to make something different with my overripe bananas. I decided to make Green Smoothie Pancakes. The pancakes contain the same basic green smoothie ingredients: spinach, banana and Greek yogurt. Green Smoothie Pancakes are a great way to add some fruit and vegetables to your morning breakfast.
- 1 cup flour
- 2 Tbs. white sugar
- 1 tsp. baking powder
- ¼ tsp. salt
- ½ cup spinach
- 1 banana
- 2 Tbs. Greek yogurt
- ⅓ cup milk
- ½ tsp. vanilla extract
- 1 egg, beaten
- In a bowl, combine flour, sugar, baking powder and salt.
- In a blender, puree spinach, banana, yogurt, milk and vanilla extract. Pour mixture and beaten egg into the flour mixture. Whisk until combined.
- Heat a skillet or griddle over medium heat. Coat with non-stick spray or melted butter.
- Pour ¼ cup of batter onto the skillet or griddle for each pancake. Cook until bubbles appear on top. Flip the pancakes and cook until golden brown.

What type is Best? Fresh, Frozen or Canned Spinach

I have always used fresh. Personally, I would stay away from canned since it might have salt, preservatives or other ingredients added to it. If you thaw frozen spinach, it may work but I don’t know how well it will blend or how it would taste.
