Chocolate cookies are made even better with the additional of Andes mints. Andes Mint chocolate Cookies are a refreshing chocolate dessert.
I love eating Andes Mints but I wanted to enjoy them in a different way. I decided to incorporate them into chocolate cookies. I recently received a bunch of Sweet Creations by Good Cook cookie making products so I was excited to try them out.
In my stand mixer, I creamed together the butter and sugars. Then beat in the egg and vanilla. I used my new pretty medium Sweet Creations by Good Mixing Bowl to combine the flour, cocoa powder, baking soda and salt. Then I mixed the flour mixture into the sugar mixture.
Now it was time for the Andes Mints. I chopped up Andes Mints plus ate some. I added them into my chocolate cookie dough. I scraped the bowl with my Sweet Creations by Good Cook Hi Temp Spatula which worked great. I loved that it has a measurement chart on to spatula for easy access.
I covered my cookie sheets with parchment paper. Then used my cookie dropper to scoop the dough out of the bowl and drop them onto the cookie sheet. The cookie dropper makes it so easy and fast plus the cookies are the same size. Then I baked them for around 9 minutes until they were done.
I let them cool for several minutes before I took them off the cookie sheet. Then we started eating them. The Andes Mint Chocolate Cookies have a great Andes Mint flavor throughout.
- ½ cup butter, softened
- ½ cup white sugar
- ¼ cup brown sugar
- 1 egg
- ½ tsp. vanilla extract
- 1 cup flour
- ⅓ cup cocoa powder
- ½ tsp. baking soda
- ¼ tsp. salt
- 1 cup chopped Andes Mints
- Preheat oven to 350 F
- In a large bowl, cream together butter, white sugar and brown sugar. Beat in egg and vanilla.
- In a bowl, combine flour, cocoa powder, baking soda and salt. Mix into the butter/sugar mixture. Stir in Andes Mints.
- Drop by spoonfuls onto cookie sheets.
- Bake for 9 minutes or until done.
