Before I go to make the roll ups, I have to sit the cream cheese out on the counter to get soft. Once it softens, I chop up the green onions. Then in a bowl, I mix together the cream cheese, green onions, salsa, cheese and taco seasoning.
I used spinach tortillas to make my roll ups but any tortilla would work (flour, wheat, tomato). I thinly spread a layer of the mixture onto each tortilla and then roll each one. I place them seam side down so they remain tightly rolled. Then I put them in a rectangle plastic container and refrigerate for several hours.
Then I take them out of the fridge to cut them into slices. I cut the ends of each one since the ends are basically scrap bites. Then I slice the rolled tortillas into one inch slices. The Tortilla Roll Ups are ready to eat or can be eaten later.
- 8 oz. cream cheese, softened
- ½ cup salsa
- 1 cup Mexican cheese
- ½ tsp. taco seasoning
- 2 green onions, finely chopped
- 6 (8 inch) spinach tortillas
- In a bowl, mix together the cream cheese, salsa, cheese, taco seasoning and onions.
- Thinly spread the cream cheese mixture onto the tortillas.
- Roll up the tortillas and refrigerate for several hours.
- Cut the rolled tortillas into 1 inch slices.
- Enjoy!

They should hold up. I sliced mine a few days ago and put them in a tupperware container and they are still tightly rolled.
